Recipe: Best Banana Bread

A delicious banana bread recipe. The cool weather always makes me crave warm, comforting food — especially sweets! And this recipe for banana bread is so easy and so delicious. You can serve it for breakfast, a snack or even dessert. It’s a great way to sneak some fruit into your kids, and if you make it with whole wheat flour, it’s pretty healthy, as baked goods go at least!  Throw in some raisins and your kids will be even more delighted.

Okay, okay, I know this recipe isn’t technically healthy, but I do think it’s more nutritious than alot of muffins out there.

Do you love fruity breads like this — carrot cake, date loaf — and if so what is your favorite?

Ingredients:

  • 1/2 cup butter (4 oz)
  • 1 1/4 cup dark brown sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 6 mashed bananas, the riper the better
  • 3 cups whole wheat or white flour
  • 1 tsp. baking powder
  • 3/4 tsp. nutmeg
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • dash of salt
  • Approx. 1/2 cup golden raisins (if desired — you can put in as much as you want!)

Directions:

  • Cream together butter and dark brown sugar
  • Mix in eggs, vegetable oil and bananas
  • Add flour, baking powder, nutmeg, baking soda, cinnamon, salt and raisins
  • Bake in a lightly greased loaf pan at 350 degrees F for 25 minutes

Makes one loaf or 12 muffins, if desired.

    Around this time of year, my favorite fruity bread is pumpkin bread, but I remember my grandma used to make this awesome zucchini bread and zucchini chocolate chip cookies. Probably just her sneaky way of getting us to eat more veggies, but they were so good that we didn’t notice the hidden nutrition!

    I have made 2 Banana Cream Bundt cakes in the past 5 days…that only uses 3 bananas. I will try this recipe soon…when I have more ripe bananas! My family loves banana bread, pumpkin bread, muffins, you name it!

    Its a tie…Love banana bread but love carrot cake muffins with cream cheese frosting. Best if you add a bit of shredded coconut into frosting

    My favorite Breads are Banana Nut Bread and Cranberry Orange Bread, with out

    I like fruit breadas without frosting. I think with the natural sweetness of the fruit you dont need that added sugar. I also feel the frosting takes away of the wonderful fruit taste.

    Every year I will make banana nut bread and ship it to the soldiers stationed in over seas. I am unable to add frosting because it wouldn’t survive the travel. I know I am able to give back and bring home comforting food to them to let them know how much we appreciate and love them for all they do for our country.

    I love banana nut bread made with pecans and I like to use cinnamon applesauce instead of using oil. Makes it lighter and real moist.
